Bóc vỏ tôm tươi, bỏ chỉ đen, rửa sạch. Cho tôm vào máy xay thực phẩm, bật máy và xay nhuyễn mịn. Cho tôm xay ra tô, thêm 1/4 muỗng cà phê tiêu, 1/3 muỗng cà phê muối ớt, dùng muỗng tán đều cho tan đều. Tương tự đem cắt nhỏ, xay mịn cá thác lát phi lê (hoặc các loại cá phi lê ưa thích), cho cá xay ra tô sạch trộn với lượng gia vị như tôm xay nhé.
Đổ 1.5-2 lít nước dùng gà vào nồi lớn, đập dập 1 cây sả rồi thả vào nấu cùng. Thêm mực ống đã rửa sạch và cắt nhỏ vào, cùng tôm khô, ít ngò rí và hành lá cắt nhỏ, đun lửa lớn cho sôi 5-10 phút. Nêm nếm ít nước mắm, muối, đường và bột ngọt cho vừa miệng.
Múc một ít tôm xay đã trộn gia vị tráng vào đáy tô, thêm muối ớt (tùy khẩu vị), hành lá và ngò rí. Múc nước lèo vừa nêm nếm xong gia vị cho vào ngập nửa tô, dùng đĩa đậy kín miệng tô ít phút cho chả tôm và chả cá chín.
Sau đó, chần bún tươi qua nước sôi rồi cho vào tô tôm đã chín, múc thêm nước lèo vào xâm xấp mặt, thêm mực, trang trí ít ngò rí và thành lá, trộn đều lên và thưởng thức.
